Habanero Salsa

- Add the habaneros, whole unpeeled garlic cloves, and tomatoes to a cast iron skillet. Cook until the habaneros begin to char and brown, about 5 minutes, stirring as they char. Alternatively, broil for 5–8 minutes, flipping halfway, until lightly charred. Let everything cool. Wearing plastic gloves, remove the pepper stems and peel the garlic.
- Add the roasted ingredients to a blender or food processor with the lime juice, orange juice, and salt. Blend until smooth, or leave chunkier for more texture. Open the blender carefully, as the spicy vapour can burn your eyes.
- Let the salsa cool, season with more salt if needed, and store in the refrigerator.
